NEW DAIRY REGULATIONS.

■•. ■ y » " ■■ — WELLINGTON, Saturday. The proposed dairy regulations drafted by the Government were laid upon tho tablo of the House of Representatives yesterday. They are lengthy and detailed. The regulations define a dairy and a dairyman in such a. way as to embrace all sources of milk supply and all occupiers of dairies, dairy managers and principal officers of companies. All dairies must be registered, the fee to be (a)^ot more than 2 cows in milk Is per annum; (b) more than. 2 but not more than 10 ■ cows in milk, 5s per annum ; (c) more than 10 cows iii milk, 1 10s per annum. Comprehensive . provision is made for the cleanliness of dairies and persons engaged in the industry. Amongst the provisions <are the following:- — Every dairy shall be provided with a cowshed suitable for mjlfcing purposes. In every shed where cows are stalled overnight the air space for each animal shall not be less than 600 cubio feet. \ The floor of every cowshed shall be of an even surfaco and formed of concrete or otl\gr material impervious to "water.-:""*; A suitable gutter shall be provided, and connected with the outlet drain. ■ < .' " ■ Every person while employed' in the handling ' of - milk in or about a dairy shall at all times keep his person clean and wear suitable and clean clothing. > Every : person shall on every ocpa* sion' before commencing to milk or to handle milk in or about a dairy thoroughly wash his or her hands an,d again, tv ask them after milking each cow. \ No person shall draw milk nor shall any dairyman, permit any milk to be drawn from any cow until the udder and tfcAts of such cow have been thoroughly'cleansed. •';.■"■ No dairyman shall place or allow to be placed in any" milk-house of cowshed anything* of a character to endanger the purity of the milk. : ' Every: dairyman shall immediately after milking (a), strain air milk; Through an approved, strainer; (b); , where the milk is not immediately separated cool it by a method approv-; ed by the inspector; (c) wliere tliel milk is immediately separated forth- : with cool the cream by a method apiproved by the inspector. Every dairyman shall, immediately after the, milk or cream is cooled,: ! keep it in a cool place and at all j. times thereafter while it is in his possession securely cover it and protect it from the sun's rays. No dairyman shall use or suffer to be used for the ptirposc of removing: milk from his dairy any can that does: not bear a conspicuous metal label distinctly marked with his name. No vehicle used for or hi connection with the conveyance or distribution of milk from or to or about any dairy premises shall be used for the purposes of carrying any live,or dead animal or any manure, filth, pig's wash jor; food, brewers' grain, or any other matter likely to injuriously affect milk.
