At some recent English shows ihe' ::old medal winners wave in butter from twenty-four hours' milk 21b. lloz., 21b. Slo;:..and Jib Uioz. Sweden, recognising the importance of the Jersey as a butter-producer, has rscsmtly imported some '200 head. All milk, directly it is taken from the cow, should bo strained through a fine wire sieve, I lined with a double piece of fine muslin, to tako out hair, dust, and otherimpuritiM. Theu it should be run over the cooler to tak? out tha odour.
