STILL OLD POTATOES
Although new season's potatoes are coming forward in plentiful supply, and in some centres are actually glutting the markets, the consumption of old potatoes is being continued at at least one military base. An Otago Dally Times reporter who recently accompanied troops on manoeuvres was surprised to see old potatoes being transported to a base depot. On being cooked the potatoes were found to be of excellent quality, but soldiers with whom the matter was discussed intimated their preference for the new season's crop, not only because the flavour and texture were more pleasant to the palate, but also because there was less waste in preparing new potatoes for cooking, this being a matter of major importance where troops carried their own rations and so could not afford to be laden with any superfluous material.
