Dehydrating of foodstuffs and storage would be the remedy for seasonal over-supply and unsaleable surplus of perishable products, growefs would have a market for all produfr tion and the public would be charged fair prices. Quantities of vegetables and fruit have recently been lost by deterioration and over-supply. This waste of essential food products should be prevented. The authorities. either Government or municipal could install dehvdrating plants in all centres at small cost and an expanding surplus of dried vegetables be sent to Britain and the fighting fronts, with most beneficial result. to health and physical efficiency.
