MILK SHAKES
The letter appearing in a recent issue of the Star, signed "FYothj" shows that the writer is what be describes himself. It seems a p£ty people should write letters on any subjects they know very little about Milk shakes are made of pure mil, with the addition of pure fruit flavourings. The cause of froth is low temperature of the milk. The colder the milk the greater the froth. Milk bars have a reputation to uphold as well as the taste and wishes of the customers, and to infer that the milk shake is not up to quality and quantity is absurd. The Health Department's inspectors are always on the job and samples <rf. milk regularly taken, and the absence of prosecutions shows that milk bars are supplying the public with -pure milk shakes."
C. C. KING, Secretary Confectionery and Dairy Association.
