Preparing Kohl Rabi

Kohl Rabi is growing in popularity in Auckland, but there are still many people who do not know the method of preparing this fine vegetable • for the table. Here is one way that is recommended: Remove the outer rind, slice thinly, place in a frying pan and cover with water. Turn a plate upside down in the pan so as to cover the slices, and cook for about 20 minutes. The plate should keep in the steam, which helps materially in softening the vegetable. At the end of the stated time pour off any remaining water, put sufficient butter in the pan with pepper and salt and replace on the fire to brown. It is useless, by the way, to attempt to grow this vegetable on poor soil. It must be grown quickly or it becomes tough and stringy. Once the plants begin to move, liquid manure should be applied each week.
