FOOD VALUES.
GENERAL IGNORANCE. DR. U. WILLIAMS' ADDRESS. Faulty nutrition and the dangers to health of denatured and refined foods were dealt with by Dr. Ulric Williams, of Wanganui, in an address to 2500 people in the Town Hall last night. The meeting was held under the auspices of the New Zealand Women's Food Value League. Other speakers were the secretary of that organisation, Miss A. E. Lori in er, and Dr. G. B. Chapman, of Auckland. Emphasising the effects of wilful and careless use of foods and unhealthy general habite, Dr. Williams urged moderation and wise choice in selecting foods. Refining and adulteration he described as modern vices and misapplications of man's ingenuity. Foods were often killed or contaminated by actual poisons'in the shape of preservatives, colouring and flavouring agents, he said. It was advisable to eat as many foods as possible in the raw etnte, as heat frequently killed their value. Infantile paralysis was due to a deficiency in vitamin 81, which was accentuated, particularly in the case of children, by an ill-balanced diet. The aims of the league were outlined by Miss Lorimer, who said that since its formation the membership had increased to between 1100 and 1200. Dr. Chapman spoke of the revolution of the new conception and approach in the fight with disease. "There is not a woman here who has any notion what she is getting when she buys food, as taste and cost, which are her only two guides, are utterly valueless," he said. The aim of the league was to provide guidance in euch matters for nutritionists. The following resolution was carried after Mr. W. J. Lyon, M.P., had epoken of the valuable work of the three speakers: "That this meeting of the league expresses its appreciation of the action of the Government in forming an Institute of Standards, and suggests that the Government should formulate a consumers' standard, making it an important phase of the work of the institute."
