COLD DESSERTS.

COOKERY DEMONSTRATION.

Of particular interest at this time of year, when summer is approaching and the housewife is perplexed with the problem of providing dainty and appetising summer meals, was a lecture on the making of desserts given at the Seddon Memorial Technical College last evening under the auspices of the Auckland branch of the Home Economics Association. The meeting, which was the last of the season, was well attended and was presided over by Miss B. Carnachan. The lecture was given by Miss A. Seay, assisted by Miss N. Burley, Miss J. Shale and Miss E. Woods, and was well up to the standard of the series of excellent lectures that have been organised by the association and have proved of such assistance to housewives _in the many branches of home economics that have been dealt with. Miss Seay demonstrated the method of making one disli from each class of desserts, such as a souffle, a charlotte, a custard, a cream and various kinds of jellies and gave hints on the making of moulds, on decorating and on the more involved processes in the preparing of desserts. Fifty-two dishes were displayed, some of which had been made by members of the committee, while home science teachers and students of the college, under Miss Seay's supervision, had made the rest. Each of the dishes was numbered and as a competition each member was required to name each dish correctly. As a prize the winner was permitted to choose any one of the desserts on display. After the demonstration supper was served.
