RAILWAY CATERING.
Four hundred thousand cups and 220,000 saucers have been ordered by the London, Midland and Scottish Railway. "We order more cups than saucers because the cups are more apt to get 'broken," an official told a "Morning Post" representative. "Large orders like this are not uncommon owing to the great scale on which we have to cater. We serve over 4,000,000 meals annually. During the summer on urdays there'are 191 different trains running with restaurant cars attached." A thousand tons of meat, 700 tons of bread and an equal amount of fish are served in a year on the four railway systems. An official of the Railway Companies' Association stated: "There are 600 restaurant cars, in addition to a number of buffet cars, and 7,500,000 meals are served annually. On an occasion such as Grand National day, we may serve 25,000 to 30,000 meals, "and about 25,000 drinks. The hotel and restaurant car staff numbers 7000."
