GINGER CANDY.

(Sent In by Shirley Wade, 5, Bracken Avenue; Epsom; age 13.)

How delicious this recipe sounds, and I can recommend it. One pound of brown sugar, 2 tablespoonfuls of flour, 6 tablespoonfuls of water, 1 teaspoonful of ground ginger. Mix the flour smoothly with the water and ginger, then put them into a saucepan with the sugar, and, after being dissolved very slowly, boil the mixture for about 20 minutes. When a little dropped in.water thickens, take it. off the fire, and put the lid on till it stops boiling. After that, stir hard, and when it thickens pour out into a greased tin.
