CHILLED BEEF.
AUCKLAND SHIPMENT.
ELEVEN HUNDRED QUARTERS.
SPECIAL RAILWAY TRUCKS.
Eleven hundred quarters of chilled beef—the first from Auckland—will be shipped by the Blue Star Line steamer Sultan Star, which sails for London on Frida3' morning. After killing at Westfield, the. quarters are loaded into seyen speciallydesigned railway trucks, which have been converted to cater for chilled carcases. The inside of the trucks are insulated all round with five inches of cork, and ice boxes are installed at both ends. Chilled air, with 10 per cent carbon dioxide as a precaution against
mould, is circulated through the truck. Before the quarters are loaded cold air is blown into the trucks. Specially-constructed chambers on board the Sultan Star will keep the beef in perfect condition until it reaches the English market. Chilled air, with 10 per cent carbon dioxide, will circulate through the chambers throughout the voyage. Chilled beef is always hung, i and not stacked, as is the case with frozen carcases. "Regular shipments of chilled beef will be made from Auckland from now on each month," said Mr. T. H. Bowie, manager of the Westfield Freezing Company, Ltd., this morning. "The next one will be by the Avelona Star at the end of the month. A special type of young cattle is the ideal beast for killing for chilling. Beefi exported from the Argentine are young two and a half to three year old finished beasts. Cattle in New Zealand are only a side line to sheep, and therefore we cannot get the most suitable types for chilling. For successful killing for chilling it is necessary to specialise in breeding and ; feeding."
