QUALITY OF BUTTER.
CRITICISM FROM SCOTLAND. (Jo the Editor.) Some time ago, when writing to friends in Scotland I advised them to buy New Zealand butter. Recently I have had some- replies, and they said, "We did buy some New Zealand butter, but it was not good." "I tried it for my shortbread, but it gave the shortbread a funny taste." "Tell them to send us the bfest, and we will buv it, for we would prefer to buy New Zealand to Danish, if the quality is <>ood." "We pay 10d _er lb for New Zealand ' and 1/ for Danish." This was rather a disappointment for me, and I think it might be worth the producers' time to inquire into the matter. There can be no increase of sales if ,
the butter does not reach the consumer in good condition. A.B.
