Tlie tomato has always boon recognised as one of the world's most healthy vegetables, and when investigations brought to light the vitamin as an essential in diet this vegetable was found to be very high in the scale of vitamin content. We are all familiar with the tomato raw, cookcd, canned and in the shape of sauce or tinned soup, but we are not 60 well acquainted with a more recent development for which the United States is responsible. In America there has been developed a great sale in tomato juice as a beverage. Some manufacturers term their product a tomato cocktail, but all turn out a highly palatable drink that has grown steadily iii public favour. Added to the appeal that the flavour may make is the Strong point that the elements that constitute the hoalthfulness of the tomato in its natural state have not been destroyed in converting it into a drink.
