ANIMAL FATS DISPLACED.

The extent to which vegetable oils have displaced animal fats in the manufacture of margarine in U.S.A. is set out in a publication by Armour and Co. This states that whereas the use of coconut oil had increased from .2 to 43.5 per cent between 1914 and 1030. that of oleo fats had dropped from 35.6 to 12.4 per cent. Oleo fats are largely derived from beef fat, and the steady diminution in the demand from manufacturers is one of the factors tending to depress prices of cattle.
