SOME WINTER RECIPES.
OAT CAKES AND OAT BISCUITS.

Dear Girls, — Some there are who turn up their noses at a plate of porridge, but these cold mornings I look forward to my plate of steaming rolled oats. There is certainly quite a lot of nourishment in the homely porridge, and in some countries the meal which many of us cook for breakfast only is made into all sorts of nice things. Rolled oat biscuits are made by some people here, and very nice they are, being something of a change from the sweet things which we are usually given. One pound «f rolled cats are required as the main ingredients, also half a pound of butter, 2oz of sugar and a pinch of ,salt. A teaspoonful of carbonate of soda dissolved in a little milk is used instead of baking powder. In making the biscuits, knead all the ingredients together, then roll out upon a pastry board and cut into rounds. These are baked in a moderate oven until they are lightly browned. Busy bees who consider that this would make a bigger batch than they require may halve the quantities. The oat cakes are just as easy to make as the biscuits. One breakfast cup of oatmeal, one teacup of flour, a quarter of a teaspoonful of salt, and a quarter of a teaspoonful of soda will be needed. With these you will want a tablespoonful of sugar and a tablespoonful of beef dripping. First of all sift the flour, salt and soda, then add the oatmeal. Rub in the dripping finely, using the tips of the fingers. With cold water mix the ingredients to a firm paste and form it into rounds. These should be rolled out, cut and baked in a quick .oven. . Everyone will'like these biscuits and cakes, and Busy Bees will find them inexpensive and easy to make.
