Poaching Eggs. "When poaching eggs place them In boiling water for a few seconds before breaking the shells. This prevents the yolks breaking. Skinning Peaches. • A way to skin peaches, which are too small to peel with a knife; is done in the same way a? tomatoes are skinned—by standing in boiling water for about 15 minutes. At the end of that time the skins will slip easily oflf the fruit. When Washing Flannels. Bo not use eoap direct on flannels. Do not use water which is .too hot or too cold. Dry at once, not too slowly. Never leave flannels lying about wet. Use viyeHa when making garments at home and you need not fear shrinkage. Lemon Juice. Very often when one is cooking only a few drops of lemon juice are required, and if a lemon is cut in two, the juioe squeezed out, and the cut fruit set on one side, the pieces of lemon dry up if they are not used quickly. .To prevent this waste extract the juice in the following manner:—Puncture the skin of the lemon with a forkj then carefully squeeze out the desired quantity of juice. After this is done, put the fruit away, and it will remain perfectly fresh for a long while.
