SOFT CROWNS IN CHEESE.
On more than one occasion (writes the New Zealand Dairy Produce Board) recently we have referred to the need for more air circulation in the cheese crates to prevent the trouble which is constantly occurring with soft crowns. Cable advice has been received that in some shipments this trouble is most pronounced. The board emphasises the need for greater air circulation in the crates, and expresses the hope that no effort will be spared to eliminate this trouble.
