UNIFORM BAKERS' LOAF.

WHEAT RESEARCH INSTITUTE

SAMPLES IN CANTERBURY.

(By Telegraph.—Press Association.)

CHRISTCHURCH, this day,

Testing of this season's wheat for protein content is being carried out by the Wheat Research Institute in Christchurch. An arrangement has been made with the threshing mill owners whereby a sample is provided from every fourth paddock threshed. Some of the samples have come in already, and about 3000 are expected.

The Wheat Institute was established recently with the idea of improving the sta.ndard of wheat and flour, and enabling bakers to make a uniform loaf. The work of the Institute is subsidised by the Government on the £ for £ basis.
