VEAL.

SAVING THE CALVES. NEW WALK ATO INDUS!RY. For some years a very substantial wastage lias occurred in the dairy industry through the wholesale destruction of young calves. Thus all the pregnant period of the cow is thrown away, and it is estimated that nearly 200,000 calves are "'knocked <ju the head" cac-h year. A croup of Waikato farmers, headed by Mr. Sam G. Lye, of Newstead, have formed; a company this season for the purpose of saving the calves for veal, and this may turn out a very profitable adjunct to the dairy farmer. These gentlemen have decided to handle the business for this season. with the idea in view of forming a co-operative calf by-product company later on. Lorry farm-to-farm services have been arranged to pick tip the calves at the farmer's gate and send them to the Auckland Co-op. Farmers/ Freezing Company. who have arranged to handle that end of the business.

On the other hand, the farmer is asked' for his assistance in not taking the calves away from the mothers too soon, and then, by gentle handling saving bruises and injuries. While for the first season high prices are not anticipated, they will be sufficiently good to pay all costs and return to the farmer a small profit on what was once a distinct loss. The "veal" industry is quite a new one for New Zealand. Last season something was done in South Taranaki. but in the older countries there is a great demand for this dainty meat.
