Francis and Son. of 334, Ponsonbv Road, and now established also at "The Corner House" in Palmerston Buildings. Queen Street. Two years ago Mr. Francis came to Xew Zealand for health reasons. He was for twenty years chief caterer at that renowned institution the Royiil Naval College at Greenwich, where his work won not only the highest commendation of authorities, but was frequently the subject of favourable comment by the Knglish newspapers. Mr. Francis is a medallist of the Food and Cookery Association having earned this distinction at the big exhibition held at the Royal Horticultural Hall. West-! minster. That certificate is a coveted one. In addition to being in charge of the college catering during the war. Mr. 1 Francis was chief cook instructor to the! Women's Naval Service from which j women were drafted to replace men at! depots going on active service. Alto-1 gether he has a unique reputation and one that he should be proud of. j MODERN CONFECTIONS. I The opening of the new shop is another big stage in the advance of the; business, for Mr. Francis, who has often j prepared menus for royalty, intends to show the people of Auckland something very superior in his art. In addition to specialising in English and French pastry, he is offering a delicacy, Breioche. better known here as the coffee roll. . Another novelty will be Vienna roles, Charlotte russe and other European and Western confections. Already a line of veal and ham pies cooked in transparent dixies is finding much favour, but Mr. Francis hopes to accomplish big things for Auckland people once he has accommodation for more modern equipment. In the meantime the Francis service at "The Corner House" will be found to supply nothing but high quality goods.
