SCIENTIFIC COOKERY.

The educational movement in Sydney to teach the mothers real economy in food values, to which' reference was recently made, is meeting with great success. The need for economy causes the ~*>roan of limited means to revolve the only two alternatives in her mind— either she must reduce the quality or the quantity. To reduce the' quality means, with unskilled cooking, distinctly unsatisfactory and unpalatable fare, and it must be conceded that the average housewife—particularly amongst the busy motl»?rs—is quite a long way 'from being a hygienic cook. Every j housewife (says the "Sun') is feeling the strain on the family purse caused by , the ruling high prices, and anyone is a. benefactor indeed who can "make a ponnd of stewing steak at 7d as nutritious and appetising as a pound of rump steak at 1/2. The Government has chosen its time well for placing a series ; of practical demonstratio-s within the reach of all. Centres are at Glebe and Rdzelle, as well as at Surry Hills, and experienced, scientific cooks "are the demonstrators. The dinner cooked comI prised four courses, each sufficient for six persons, and the cost of the whole is stated to have been 3/. The dishes were liver and bacon, baked fish, apple pudding, and macaroni cheese, and very j appetising they looked. Great interest was, displayed by those present, and there was constant questioning and the rustling of paper, because nearly everyone was taking notes. There "are no fees in connection with these demonstrations, which were intended, in the first place, for the mothers of girls attending the domestic public schools, and visitors are heartily welcome as far as accommodation permits."
