PAPER BAG COOKING.

An interesting display of paper bag cookery was given yesterday afternoon in tiie Auckland Gas Company's showrooms by Mrs Foster-Denny. The display was the first of a series w.iich the Company intends to give in all the various Auckland suburbs during the next two months in order to show the advantages of thh method when carried out -with the aid of a gas range. A variety ot articles were cooked, paper bags being employed in the making of beef tea and an appetising dish of kidney and bacon. The beef tea was cooked in two bags, the outside of the inner one being thoroughly greased. The resulting liquid was in all respects similar to that cooked in the ordinary way, though only half an hour in the oven was required. It was pointed out that the paper bag method was very economical with gas, as for small dishes only about ten minutes longer was required, while the gas could be iturned down so that only half the usual quantity wasc Truined. The Company's "Auckland Cooker" was the range em ployed for the demonstration, and besides the paper bag dishes there were cooked in it a fair-sized sponge cake, some tarts, and two batches of scones, while the kettle was also boiled for tea. ' When the gas was finally turned out the meter showed that for one hour and twenty minutes the cost was lid, reckoning by the hijrhest rate charced in Auck- ! land. Further public demonstrations trill be eiven this week in the Company's Hew upstairs showroom, and the dates of the suburban demonstrations will be ] duly advertised.
