SCIENTIFIC.
The cleaning out of kitchen boilers is seldom, if ever, thought of. All sediment cocks should bo left open at least once a week for tho space of fifteon minutes, so 03 to clean and wash out all foul sediment. Oftentimes when complaint is made that the water smells, or that it doesn't heat properly, the real cause will be found to arise from this neglect alone.
The following is givon by the Boston " Journal of Commerce" as an excellent cement for leather belting :—" Common glue and isinglass, equal parts, soaked for ten hours in just enough water to cover them. Bring gradually to a boiling heat and add pure tanning until the whole becomes ropy or appears like the white of egga. Buff off the surfaces to be joined, apply this cement warm, and clamp firmly."
Dr. Fothergill, a greatly respected En.;lish authority on dyspepsia, speaks strongly in favour of milk puddings and stewed fruits for the dyspeptic, the bilious and tho gouty. He says : "Sugar is undoubtedly objectionable to many, but it is by no means necessary to add sugar to stewed fruit. If the acidity be neutralised by a little bicarbonate of soda the natural sweetness of the fruit will be brought out and the dish be made more agreeable than though artificially made sugar were added."
The Boston " Cultivator" declares it to be a matter of fact rather than of fancy that there is moro nutrimeut in a dark than a white-shelled egg. The white of a whiteshelled egg ia like milk of lime-water, -while that of dark eggs haa substance, is gelatinous in appearance, aud will hold together if lifted a few inches, and, it is claimed, is one-third more valuable for all culinary purposes. All this may or may not bo true but it is certain that the dark-shell eggs so'; for ons-fourth more in the markets than th. white-shelled ones.
