PARISIAN MEAT.

mo iujw»*"g H <.xagrapb appears in the London Daily Telegraph : Parisians appear to he going from bad to worse in tha matter of meat. Only at the shops cf the Srst-elass butchers can prime sirloins, legs of mutton, steaks and chops be procured, the average quality being deplorable. Cow-beef and horseflesh have long Sgured largely in the cheap establishments ; and now a cry of horror and disgust is being raised, as several butchers have been caught red-handed in the act of selling cutlets and other portions of the dogs. This apology for meat has been seized by the veterinary inspectors of the metropolis, who are all the more convinced that they are on the track because of the fact that several largo dogs well known in tht; neighbourhood had disappeared, and that the heads of some of f .hese animals had been afterwards discovered stuffed into the mouths of drains. Some of the butchers are alleged to have said, by way of an excuse, that they were not versed in the mysteries of comparative anatomy, and that they bought without suspicion what was offered to them for sale. A veterinary surgeon has just declaied that the flesh of the dog is not harmful so long as it is properly cooked, and also on the condition that the animal was not affected with rabie3 or tuberculosis. Those, however, who have unconsciously banqueted on canine meat, procured at the shops of the butchers who have just got into trouble, will hardly do rive much consolation from this explanation. It is true that during the siege the flesh of the dog was not disdained, and even figured on of the tables of good restaurants, but Parisians are by no means eager to repeat the experiment in these piping time of peace.
