Factory Cheddars, of good quality and in liberal supply, are quoted on our market at from 38s to 425, whilst coloured New Zealand in particular, is now up against fine quality ' Cheshire, which is being retailed at 5d per Ib. Twenty per cent. Dutch Edam at 3Jd per lb retail would not appeal to the epicure —it is very poor cheese —yet it is being bought; and every pound of cheese sold that is not New Zealand or Australian obviously, means less inquiry for those kinds. . . ." "Cheese of the very best quality maintains its level, up to 90s being paid for special dairies of English and up to 66s for old Canadian, but supplies of the latter at any rate are negligible; while only 639cwt of new Canadian arrived last month, as compared with 198,435cwt New Zealand and 23,477cwt Australian. But it must be borne in mind that the extreme prices quoted for English and Canadian are only possible because there is only the smallest quantity available."
