Here's a delicious sponge! MOCK CREAM FILLING 1 ½ teaspoons Edmonds Cornflour, ½ cup Milk, 2 tablespoons Icing Sugar, 2 tablespoons Butter. Mix cornflour and milk together into a smooth paste, then boil 3 or 4 minutes. Cream butter and sugar, and add cornflour gradually when cold. Beat well. Flavouring may be added. SPONGE SANDWICH 3 Eggs, 4-ozs. Sugar, 2-ozs. Flour, 1-oz. (2 level tablespoons) Edmonds Cornflour, 1 teaspoon Edmonds Baking Powder, 1-oz. Melted Butter. Beat eggs and sugar until thick and fold in sifted dry ingredients, then add melted butter. Put into two sandwich tins (8 inches) which have been greased and floured. Bake 20 minutes at 375°F.
