TODAY’S RECIPE
DUTCH APPLE FLAN Required: A little sugar and ground cinnamon to taste, two eggs, three tablespoons butter, two tablespoons castor sugar, custard sauce to serve, 4 Lb. flour, 2 teaspoons baking powder, 4 teaspoon salt, twothirds cup milk, five large tart apples. Mix and sift flour, baking powder and salt into a basin. Stir in sugar. Rub in butter with the tips of the Angers . Add milk mixed with beaten eggs. Mix to a soft dough. Divide in two. Roll out and cut into rounds. Peel, core and cut apples into fingers or slices, then place the dough in a round sandwich tin. Press the apple into the dough in symmetrical circles. Sprinkle with sugar and ground cinnamon to taste. Bake in a hot oven for about 30 minutes, reducing the he it after the pastry has risen. Serve with custard sauce. Enough for eight persons.
