COOKERY NOTES
Cheese Omelette.—Beat four eggs. Heat an omelette pan, turn the eggs' "in, sprinkle with pepper and bait, 'shake until thick, dredge over three Jablespoonfuls of grated cheese, let Net; fold over and serve immediately. Sausages.—These are excellent tf ':ooked as follows: Place them in a deep piedish, cover them with boiling" water, and allow them to stand for a few minutes before frying then* They may then be cooked without pricking, and are a great improvement on the ordinary method. They will not disagree with invalids so easily if cooked in this manner. Boiled Fresh Beef.—Take a piece of beef cut from the round or the undei ribs and plunge it into sufficient boiling water to cover it, and allow it to boil rapidly for fifteen minutes, and then let it gently simmer, allowing fifteen minutes to each pound of beef. This may be served with a goo<t cream horseradish sauce, boiled car tots and turnips, and potatoes.
