SECOND EDITION. N. Z. BUTTER AND CHEESE.

MUCH IN FAVOUR AT HOME. Interview With An Expert. (Per United Press Association.) AIASTERTON. July-24. Mr W. F. Crichton, ex-honorary secretary of the A 1 anchosler Butter Conference who is visiting New Zealand on behalf o' the well-known firm of AVoddel and Co. Ltd., London, in order to arrange !o: largely increased supplies, interviewed bv th® Wairarapa Daily Times said that r large number of buyers all ovei«the Unite! Kingdom were now taking up onr produce who formerly never handled the same, admitting that it is as good as that o' any country in the world. It was a mistake to suppose that all onr dairy pvoducwas sold in London. On the contrary, it was sold in a hundred places all over the . Kiriodom, and in Germany, and other Continental towns trade was expanding very rapidly, and calls for fresh mc'inodof distribution. The quality of our butter was not below the Danish, but the latter was obtainable al l the year round. Mr Crichton advocates winter dairying i” New Zealand, so as to keep London supplied constantly. He also says the Government should advertise onr nrodnne bv means of popular lantern lectures on fanning in New Zealand, also the history of hotter and cheese from the cow to the British table throughout the United Kingdom. Buyers at Home are thoroughly satisfied with the Government supervision of produce at this end, but ton much care cannot be exercised as an ex-

eess of moisture or foreicn flavour in an f odd shipment reawakens the old projud'ccI against imported frozen pioduce. Mr. ' Crichtoa strongly favours the ostaMwbment of a new superfine grade of butter, which will raise the standard of all grades. Tow testing is also very important. Referring to cheese, Mr Crichton said the quality cannot be improved; our cheese in many cases was bettor than the Canadian. The supplies of the latter are falling off, and prospects are very bright. Ho anticipates a largely increased demand for New Zealand cheese at Home next season.
