Up to the present, little or nothing has been done" in New Zealand with regard to the manufacture of fancy cheeses which, in some > other dairying countries is the source of considerable amount of revenue. The Minister of Agriculture has now decided to make; a departure in that direction and to that end has appointed as instructress, Miss Davis, who recently arrived from England with high credentials as to her ability in that line. It is not anticipated that anythng can be done at present by way of creating an export trade for soft or fancy cheeses, but it is considered that there is large scope locally for the industry, more particularly in the chief centres where the production of soft and fancy cheeses has been fostered. It has been found to be a higlfly payable business and it is anticipated that this will be a prominent feature in the \ development policy already announced by the Minister for Agriculture. Already more .than one dairy company has intimated that it will be glad to avail itself of Miss Davis's services as instructress, and it is considered likely that the departure will result in a large increase of the dairying industry.
