MARGARINE V. BUTTER
IMMENSE CONSUMPTION OF FORMER.
There is no doubt that the average New Zealander, including the dairy farmer, has little idea of the immense consumption of margarine in Britain and elsewhere in Europe. We regard Danish. and other butters as oulr chief competitors, but margarine is the real enemy.
The production of margarine is a great industry, one factory in Ulster turning out 1200 tons a Aveek, or half as much as the Avhole of the butter exported from New Zealand. There are other factories in London and elsewhere on a similar scale. Much capital is sunk in these factories, and each is equipped with up-to-date laboratories, where skilled chemists have for years endeavorued to keep the product up to the mark and to improve it.
