AS A CERTAIN PREJUDICE seems to exist against this Flour, the following particulars are published for general information : On the 30th October, 1889, a parcel was sent to the Colonial Laboratory for examination, and on the 10th December Sir James Hector reported—“ This Jlour has been tented for bread-making , for tarts, and for cakes , and gave every satisfaction.” This not being delinite enough, a further sample was sent 16th May, 1890, and with it some “ Snow Drop ” and “ Silver Dust for comparison. On the 7th June the following report was issued by Sir James Hector : , COMPOSITION. SNOW DROP SILVER OUST ONGA ONGA GENERAL REPORT. “ Those results show that the ‘ Snow Drop ’ and the ‘ Onga Onga ’ flour are practically of the same composition, and contain about 8 per cent more gluten than the flour handed in as * Silver Dust.’ As gluten is the most valuable constituent of flour, it certainly appears that the ‘ Onga Onga ’ flour is about equal to that known as the ‘ Snow Drop,” and is superior to the 1 Silver Dust ’ flour.” (Signed) “ William Skey, F.C.S ” It must be clear from this that the prejudice that exists in some quarters against the Onga Onga Flour is entirely unfounded. Samples of special whiteness owe their colour to a roller process which often deprives the flour of nearly half its most valuable constituent —the gluten , or flesh forming element—leaving an undue preponderance of starch and sugar, and rendering the resulting bread unsuitable and uneconomical for family use. ror certain kinds of pastry ‘ Silver Dust may have merits ; for household and general use 4 Snow Drop’ and 4 Onga Onga appear far better, and of about equal value.
