CALF'S HEAD SOUP.
Procure half a calf's head, rub it with salt, soak it for six hours, . and clean it thoroughly; place in a scewpan and cover it with three quarts of water, adding one onion stuck with cloves, and a small bunch of sweet herbs; two blades of mace ; when when well skimmed and boiled for one hour and a half take the head out and skim and strain the soup ; mix 6oz. ground rice with three tablespoonf uls of catsup, then add it to the soup to thicken ifc, allow it to simmer for five minutes ; cut up the head into pieces about two inches long, and simmer them in the soup till the meat is quite tender, season with pepper and mace, and serve it very quickly; when you take the calf's head out of the soup be sure and cover it up or it will discolour.
