PEACH MERINGUE PUDDING One lb dried peaches, 3 tablespoons sugar, 2oz rice, 2 eggs, J pint milk, lemon rind. Cook rice in milk until soft and flavour with grated rind. Add 1 tablespoon sugar and yolk of 1 egg. Put this in a buttered pyrex dish and cover with the peaches which have been washed and soaked in water overnight. Add remainder of sugar and yolk of egg beaten together. Bake in a moderate oven for 20 minutes, then remove and pile on the stiffly beaten whites, sweetened. Brown slightly.
