ICED TEA
Useful Hints There are two ways of making iced tea, and each appeals to a different kind of palate. Americans love the clear amber liquid, which is simply made by pouring hot tea over ice and flavouring it to taste with sugar and lemon. Australians—oddly enough, as their hot season is more oppressively hot than in some parts of the United States—like something much thicker, sweeter and creamier in the way of iced drinks. Creamed iced tea is made by infusing two tablespoonsful of tea in.a quart of boiling water for five minutes, then pouring it off into a jug and leaving in the refrigeratory for two hours; mix the tea with 3oz of castor sugar and a quarter-pint of cream (or half a pint of milk) and put back in the refrigerator.
For summer parties it is well worth while giving guests the choice.
