DAIRY PRODUCE MARKET.
BUTTER AND CHEESE GRADED. The figures of the dairy division of the Department of Agriculture show that the salted butter graded for February was 61G9 tons, and the unsalted 385 tons, a total of 6554 tons, compared with 7030 tons salted and 517 tons unaalted, a total of 7547 tons for February of last year, a decrease of 13.1 per cent. For the seven months ended February, the respective quantities were: 42,635 tons and 3005 tons, a total of 45,640 tons, coinpared with 49,123 tons and 3302 tons, a- total of 52,425 tons, a decrease of 12.9 per cent.
The cheese graded for February, comprised White 5095 tons, coloured 3342 tens, a total of 8437 tons, compared with 5523 tons white and 2963 tons coloured, a total of 8486 tons, a decrease of 0.5 per cent. The quantities for the seven months ending February, 1924, were: White 32,661 tons, coloured 20,283 tons, « total of 52,944 tons, compared with 26,827 tons white and 14.909 tons coloured, a total of 41,73 d tons, an increase of 26.8 per cent. Converting these figures into butterfat equivalent, there is a decrease of 2.2 per cent, in butter-fat production for the seven months, as compared with the corresponding period of 1922-23. Stocks held in the various grading ports at February 29 were: Butter, 3191 tons; cheese, 5493 tons.
