CHICKEN CROQUETTES If cups cold cooked fowl. i teaspoon salt. i teaspoon celery salt. Few grains cayenne. 3 tablespoons flour. 3 tablespoons butter. 1 teaspoon lemon juice. Few drops onion juice. 1 tablespoon finely-chopped parsley. 1 cup milk. | cup finely-chopped celery.

Make a white sauce from butter, flour, seasonings and milk'. Add chicken and celery. Spread on a platter and leave till cold. Shape. Roll in finely-sifted dry breadcrumbs, then in egg, and again in breadcrumbs. Fry in deep fat at 385 degrees F. till golden brown. Drain and serve piping hot. Note. —White meat absorbs more sauce than dark. If dark meat is being used, do not use so much sauce. SARAH.
