STEWED KIDNEYS 2 kidneys. 3 bacon slices. 1 onion (small). J teaspoon mustard. i teaspoon salt. Shake of pepper. 1 cup of water. § tablespoon flour. Remove skins from kidneys and cut in pieces and place in saucepan with the water. Bring slowly to the boil, skim, add sauted onion and bacon cut in dice. Simmer till tender. Add pepper, salt and thicken with the flour and mustard mixed to a smooth paste. Second Method. — Kidneys. 2 tablespoons butter. i cup brown stock or water. J onion. i lemon. Skin kidneys and cut in slices. Melt butter in a hpt frying-pan, put in kidneys and cook five minutes. Dredge thoroughly with flour and add the stock or water (hot). Cook five minutes, season by adding lemon juice, onion juice, salt and pepper, and serve on tOaSt- SARAH.
