Useful Substitutes
WHEN ordinary supplies fail, the Pol lowing substitutes may be tried:
1. If dried breadcrumbs are not available, a prepared cereal, finely crushed, serves the purpose. l-'oi savoury dishes an unsweetened cereal should be used.
2. A flaked cereal may be used instead of broad in an apple charlotte .'.. In place of candied peel in cakes, puddings, and so on, an equi valent quantity of marmalade is satisfactory. 4. Instead of prepared browning or caramel a little Hour, browned on a plate in a hot oven and then allowed to cool, may be used to brown and thicken gravy. To brown gravy without thickening it, place one or two lumps of sugar in the roasting-tin with the joint. o. When parsley is not available, watercress may be used for garnishing cold meats', sandwiches, ami so on. (i. A temporary wick for a spirit lamp may be made from folded blotting paper. 7. Broken incandescent mantles, finely crushed, may be used instead of plate powder to clean silver.
