RIMLESS CHEESE ‘ A NEW DEPARTURE During the past two months, experiments have been carried on by the manager of the Wright’s Bush Dairy Factory (Mr G. E. Hicks), in the manufacture of rimless cheese, and up to the present time these have been attended with a great deal of success. Mr Hicks informed a representative of the “Southland Times” that already he had sent away six shipments of cheese, manufactured under the new process, but not received any advice as they had opened up in the Old Country. A number of such cheeses were also being prepared for exhibition at the Waikato Show, which was to take place shortly at Hamilton. He believed that the now system was going tojprove a valuable one for the industry, and would assist materially in preventing a good deal of 'Ac., shrinkage which took place in choose nndor present conditions.
