The employment of micro-organisms in industrial processes was interestingly discussed one evening by Mr F. L. Armitage in an address to the Auckland Agricultural Science Club (relates the Star). The fermentation processes'for the production of beer, vinegar, cheese, and many other commodities were explained, and Mr Aumitage dwelt specially on the importance of bacteria to the agriculturist. He forecasted that micro-organ-isms would be of great importance in the future in the utilisation of waste products, particularly those of a yeasty character. It might yet be possible, he said, to realise the scientist’s dream of converting the evening newspaper into sugar for sweetening next morning’s coffee!
