School of Home Science Assists the Housewife

NOTES FOR WOMEN

Do you like your potatoes “ soapy ” or floury? Do you know which have the best flavour, and have you any idea of what varieties have the best keeping qualities? Cooking tests on 30 varieties of potatoes to answer these and other questions were carried out on last year’s crops by the Foods Department of the School of Home Science of the University of Otago for the Department of Agriculture. When the subject has been fully investigated, a representative of the Foods Department told the Daily Times, suitable varieties can be recommended to growers, and Dominion housewives should be able to choose the perfect potato for their needs.

The soggy potato, the kind with a " bone ” in the centre and the outside rapidly dissolving away, or broken chunks where smooth pearly tubers have been envisaged will be a thing of the past, it is hoped, when this research is completed. In order to determine, again for the Department of Agriculture, the kinds of lemons favoured by housewives, the Foods Department has pursued inquiries and conducted experiments, chiefly on Meyer lemons and the varieties, including “ Lisbon ” and “ Eureka,” known as “ standard.’ When definite facts and preferences have been ascertained, growers can be advised to concentrate on the most popular varieties.

With a view to assisting the housewife, tests to discover the best types of peas for canning have also been carried out —this time for the Plant Research Institute. Research work on household matters is another aspect of the work of the School of Home Science, which has received some attention in the past, and a new career which includes the realm of the housewife, is that of rural sociology. Several graduates—for this calls for the degree of master of home science—are already engaged in this work and are attached as regular officers to the Department of Agriculture. For her thesis one is making a survey of housing in Central Otago.
