THE “OMELETTE QUEEN”

The “Omelette Queen ’> of France, the famous Mother Poulard, of Mont St. Michel, recently died at the age of 80. Her recipe made the Mont St. Michel omelette famous the world over. Mine. Poulard opened Her restaurant in 1875, when tourists were few and far between, and quickly won fame. Various reasons have been given for the excellence of her omelettes. One story has it that a little olive oil is added while the eggs are being beaten up, and another that Mine. Poulard always beat the yolks and whites of the eggs separately. The name Poulard now appears over half a dozen hostelries at the Mont St. Michel, each of which professes to serve the same type of omelette.
