Sir,—ln your issue of to-day I note your correspondent Mr William Higginson coming forward as the " champion of the fortunate little butchers on a small fcale" to show that they are quito content with the depreciation of their hides and Bkins, loss of by-products, no food for their stock, &c, &c. Such blindness to their own welfare can only bo accounted for by the unlegitimate profits at present obtainable, which Would be put a atop to by the appointment of an inspector. jTour correspondent writes that " little butchers " are in favour of public abattoirs) but object td them being carried out by a syndicate,and want them erected by the corporation, well knowing that this body has neither the inclination nor money to do so. What matter what ring, corner, syndicate, or combination carries out the requirements of such a place at the lowest remuneration, ascertained by public tender, so long as our city fathers keep the order, inspection, cleanliness, &c. in their own hands aud the right to acquire them in after years. I want someone to come forward and try to prove that my figures are wrong, not to insinuate that I try for the management or inspectorship. I would not accept Wages or salary from anyone, but I am agreeable to undertake to do the slaughtering and carting from a properly constructed abattoir at less than half of what the little butchers pay now. Your correspondent must acknowledge that this extra charge must be paid for, by the .public, hence the necessity for abattoira—apart from the saving of By-products, cleanliness, and the necessity of. inspection. I would ask your correspondent which of the slaughter yards of which the " little butchers " have their choice have large grazing paddocks, and if there is given a turnip, hay, or straw to the stock, lam convinced that the saving of the
