Health, and her duties are to enforce cleanliness and sanitary conditions in hotel and restaurant kitchens. She trill have authority to inspect the kitchen arrangements, the quality and condition of the materials to be served to the guests. and the manner in which the cooking is done. There are some cities in which there would be little or nothing for a kitchen inspector to do, but in many of the larger cities, especially where the cheaper character of hotels and restaurants flourish, there
is little doubt that questionable food materials are cooked under improper conditions and served to hundreds of unsuspecting persons every day. In Cincinnati the managers of all the better class hotels and restaurants have welcomed the innovation, believing that the system of inspection will help their business by advertising it as clean and wholesome.
