PRIVATE HOTEL GUESTS EFFECT OF HIGHER COSTS CHANGED SYSTEM SUGGESTED BED AND BREAKFAST ONLY [iJY TEL EC; HAP H —PRESS ASSOCIATION'] CHRISTCHURCH, Friday The tariff's of private hotels are to bo increased, according to a resolution passed at a meeting of the Canterbury Private Hotels Proprietors' Association. The resolution was as follows: "Owing to further increases in wages, rates and cost of foodstuffs and materials, the association, in company with other associations in the cateiing business, finds it necessary to obtain additional revenue to meet these additional charges and, with this object in view, it resolves that all tariffs be increased accordingly." The meeting gave full consideration to the provisions of the new award introduced on September 5, and it was agreed that the increase in wages and the restrictions on employees had forced employers to consider seriously adjustments in staff arrangements. It was felt that, in the interests of the public, especially tourists, everything bho ik! be done to ensure adequate facilities. _ 4 It was also decided to invite other private hotel associations to consider the abolition throughout New Zealand of the present system of full tariff and board and catering for bed and breakfast only, it was stated that overhead costs, which were excessive under the present system, would be reduced considerably under a bed and breakfast system. Less staff would be required and less foodstuffs consumed. It was decided that, if this proposal were favourably considered, licensed hotels should be invited to co-operate in the same system.

Concern Svas expressed at the lack of young people learning the trade of the hotel chef and, as an extreme shortage was foreseen in the near future, it was decided to recommend to the Hotel Employees' Union the institution of a course of instruction at technical schools or elsewhere, and the introduction of a system of certificates.
