Vitamin Value

The tomato, or love apple as it is sometimes called, is aij important article of diet. It yields vitamins A, B and C more liberally than any other fruit. Weight for weight, it is the equal of lettuce in vitamin A and of string beans as a source of C. A tablespoonful of the juice contains as much vitamin C as an equivalent amount of orange or lemon juice. One medium-sized tomato will suffice for your vitamin 0 contribution to the daily menu, but it must be eaten uncooked. While tomatoes, if cooked in their skins, lose little of this vitamin in the short time required for cooking, it is a dietetic crime to fry them cut up in the ordinary way. Tomatoes are richest in vitamin C in the early part of their natural outdoor season.
