RESTAURANT KITCHENS.
Sir, —In reply to your correspondent "Restaurant Keeper," may J. be allowed to point out that it was precisely because of specific complaints made to the Civic League that the resolution refened to was passed and forwarded to the authority concerned. The Civic League is very careful not to do or say anything that would reflect against any individual or business, but it does believe that, one of its functions is to co-operate with the sanitary and health departments in their attempts to enforce cleanliness of service and the provision of pure unadulterated food to the public, whether such food is in the form of prepared meals, or the raw product retailed by shopkeepers. The league is quite aware of the use of the electric torch by inspectors and, as a result of this more thorough inspection, complaints are fewer and xess frequent than in the earlier years of its activities. "Restaurant Keeper would be well advised to join the Civic Leaguo and help to raise the standard of cleanliness in all restaurants to that, presumably. obtaining in her own. E. M.
