SPECIAL RCEIPES. Cheese Paste.—Half pound cheese cut small, butter, 2 eggs, £ cup of milk, 1 teaspoonful salt (small), £ teaspoonful cayenno pepper. Mode: Warm the cheese and butter until soft, then stir in the beaten eggs, milk, and lastly salt and cayenne pepper. Boil all together a few minutes.

Honey Biscuits.—Boil together 21b. sugar, and 1 cup of water for half and hour. Add 21b. honey, stir until melted, then add 1 tablespoon of lard, and allow it to melt. Put into a dish until slightly cooler, then add 4 eggs, 1 tablespoonful of ground cloves, 2 tcaspoonfulls of carbonate of soda dissolved in a little water, and mix with sufficient flour so as to be able to roll out (not too stiff). Bake in a moderate oven.

StuSed Apples.—When baking apples have you over tried stuffing tliern with dried fruits, such as raisins, figs, ginger, or crystallised fruit. Dates make a very nice filling also. Peel and core the apples, and fill the centres with dates, finely chopped. Arrange in pie dish, sprinkle with sugar, and place a piece of butter on each. Pour about 2 tablespoons of water in dish, and bako until quite soft. Serve with cream or custard.

Marrow Toast.—Get the marrow from beef bones. The bones should be sawn into short pieces (the ends covered with a flour and water paste), and boiled in a floured cloth about two hours. Pick 011* the marrow, season it with pepper and salt, and spread it on fried bread or hot buttered toast cut into fancy shapes. Heat up in the oven and servo very hot. Sprinkle with chopped parsley and add a dash ot lemon juico before serving.
