FANCY BISCUITS.
Savoury Cheese Biscuits. —Ingredients ; Quarter of a pound of flour, ,2oz. of but. ter, 2oz. of cheese, half a saltspoonful of salt, a few grains of cayenne pepper, loz. grated parmesan cheese. Any kind of cheese can oe used lor the biscuits. Gratq it hneiy. Rub tiie buttor well into the flour, add the cheese, salt and pepper. Miv with just enough coid water to make a stiff dougii. Roil out. Cut in strips and bake m a moderate oven on a wellgreased tin about 15 minutes. Sprinklo with parmesan cheese, return to the oven for a minute and serve hot. Afternoon Biscuits. —gib. of flour, a tablespoonful ot castor sugar, 2oz. of butter, a pinch of salt, g a saltspoonful of carbonate of soda and milk to mix. Sift the floutf and rub in tile butter. Add the sugar, salt and soda. Then mix to a dry paste with milk. Roll out to the thickness of an Osborne biscuit, cut into fancy shapes with biscuit putters, and bake in a very moderate oven until the biscuits are a pale golden shade. These can ba served plam, or decorated with various kinds of icing. If you like two can be sandwiched together with jam or jelly between. ' > Cream Biscuits.—lngredients: 4oz. butter, 3oz. flour, loz., soft sugar, 2 yoli\S of eggs, sour cream, | teaspoon essence vanilla, few drops glycerine, blanched almonds chopped very finely, e ' cinnamon, i teaspoonful soda. Method: Mix sugar, soda and flour togetner, ruo in the butter, add essence of glycerine, mix into a firm paste with cream and volts. Roll out thinly, brush over with White of egg beaten and sprinkle with sugar, cinnamon and almonds; cu squares, and bake a pale brown in a moderate oven. . - . . Orange Biscuits.—lngredients: 4oz. but ter, 3oz. soft sugar, 2oz. ground rice. 6oz. flour A teaspoonful baking powder, & yolks' of eggs, 1 dessertspoon grated orange 'rind, few drops orange colouring, some royal icing. Method: Cream the butter and sugar well: add yolka of eggs and beat. Mix in rest of ingredients, toII out thiniv, cut into oblongs, and babe m a moderate oven. Time, about 15 minutes Before quite cold decorate with the royal icing. Note: These biscuits may be put thfough a biscuit .forcer* . .
